Canning Tips for September 2009:
Freezing Peaches:

1. Boil some water in a large pan, gently place peaches in to loosen the peels. Immediately put in cold water to stop any cooking action. Peel off skin.

2. Slice peaches, put in a large bowl. Sprinkle with Fruit Fresh according to directions on the jar. Put in Ziploc bags, or plastic containers. Freeze.

3. The Fruit Fresh is just a vitamin C powder that keeps them from turning dark. You can make syrup and freeze them in it, but is not necessary. Also, you can freeze with sugar, but it is up to you. Just sweeten to taste before you put in the bags or containers. If you freeze without sugar, you can defrost and make jam later.
