Recipes for the Month of December:
BAKING WINTER SQUASH: ACORN, BUTTERCUP, BUTTERNUT, OR SPAGHETTI:
  • Wash squash.
  • Cut each squash lengthwise in half; remove seeds and fibers.
  • Place squash halves in ungreased rectangular baking dish, 13x9x2 inches.
  • Sprinkle cut sides with salt and pepper.
  • Dot with margarine or butter.
  • Pour water into dish to ¼-inch depth.
  • Cover and bake in 400 oven 30 to 40 minutes, in 350 oven about 40 minutes, in 325 oven about 45 minutes or until tender.
  • For spaghetti squash, remove strands with two forks.

OVEN CRISP POTATO WEDGES:
  • 1-1/2 pounds small red potatoes
  • 1 tablespoon olive oil
  • 4 teaspoons finely minced garlic
  • ¾ teaspoon coarse salt
  • ½ teaspoon paprika
  • ¼ teaspoon freshly ground pepper

Preheat oven to 525 degrees. Quarter potatoes and place in large bowl. Drizzle olive oil over potatoes and toss.

Sprinkle garlic, salt, pepper, and paprika over potatoes; toss to coat well.

Line a baking sheet with foil and lightly spray with vegetable cooking spray. Arrange potatoes on prepared baking sheet. Roast for 20 minutes stirring once or twice during cooking.

Raise heat to broil. Broil potatoes until crisp, watching closely not to over-brown, about 1-2 minutes.

Family Favorites Made Easy


STRAWBERRY SANTAS:
  • 1 package (8oz) cream cheese, softened
  • ½ cup marshmallow cream
  • 12 large strawberries
  • 12 fresh or canned pineapple chunks (1-inch pieces)
  • 12 frilled toothpicks
  • 24 miniature semisweet chocolate chips
  • 12 white chocolate-covered crème-filled chocolate sandwich cookies (like white-chocolate-covered Oreos)

Beat cream cheese and marshmallow crème in medium bowl with electric mixer on high speed until fluffy. Place cream cheese mixture in decorating bag fitted with #17 star tip or in resealable plastic food bag.

Cut strawberries crosswise in half. Thread strawberry piece, pineapple chunk, and remaining strawberry piece onto toothpick (frilly end of toothpick should be on pointed end of strawberry to form hat top); press chocolate chips into pineapple for eyes.

Pipe cream cheese mixture onto strawberry "hat" to form fur trim and onto pineapple to form beard. (If using bag, snip corner of bag to pipe cream cheese). Cover and refrigerate no longer than 2 hours. Serve on sandwich cookies.
